Ingredients
- ¾ lb beef sirloin or strip steak, thinly sliced
- 4 cloves garlic, minced
- 2 cups cooked white rice
- 2 whole eggs
- 1 small papaya, peeled and sliced
- 1 whole cucumber, sliced
- 1 whole tomato, sliced

Mix beef with 2 minced garlic cloves, 2 tbsp soy sauce, 1 tbsp brown sugar, and a pinch of black pepper in a bowl.

Heat 2 tbsp oil in a large skillet over medium-high. Brown beef slices 2-3 minutes per side without stirring until caramelized.

Remove beef to a plate. Add remaining 2 minced garlic cloves and 2 tbsp oil to the same skillet.

Stir in cooked rice, breaking up clumps, until edges start to crisp and garlic is fragrant, about 4 minutes.

Push rice to the side. Crack eggs into the pan and fry until whites set but yolks still jiggle, about 3 minutes.
