Ingredients
- 1.5 lb beef stew meat
- 1 large yellow onion
- 1 cup prunes
- 2 cups beef broth
- 1 tsp ground cinnamon
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
Instructions
- 1
Season the 1.5 lb beef stew meat with 1 tsp salt and 0.5 tsp black pepper. Heat 2 tbsp olive oil in a large pot over medium-high heat.
- 2
Add the beef in a single layer and sear until browned on all sides, about 5-7 minutes. Work in batches if needed to avoid crowding the pan.
- 3
Add the 1 large sliced onion and 1 tsp ground cinnamon to the pot. Cook, stirring, until the onion is soft and translucent, about 5 minutes.
- 4
Pour in 2 cups beef broth and bring to a boil. Reduce heat to low, cover, and simmer until the beef is tender, about 30 minutes.
- 5
Stir in the 1 cup prunes and continue simmering uncovered until the sauce thickens slightly and the prunes are plump, about 10 minutes. Taste and adjust seasoning if needed.
- 6
Serve hot over couscous or with crusty bread, garnished with fresh cilantro if desired.
