Ingredients
- 1 lb beef sirloin, thinly sliced
- 1 medium onion, sliced
- 1 large orange, peeled and segmented
- 8 small corn tortillas
- 1 whole lime, cut into wedges
- 2 cups lettuce, shredded
- 2 tbsp olive oil
- 1 tsp salt
Instructions
- 1
Heat 1 tbsp oil in a large skillet over medium-high. Add onion and cook until soft and golden, about 5 minutes. Remove to a plate.
- 2
Add remaining oil to the skillet. Season beef with salt and sear in a single layer until browned, about 2 minutes per side. Work in batches if needed.
- 3
Return onions to the skillet with the beef. Stir to combine and warm through, about 1 minute.
- 4
Warm tortillas in a dry pan over medium heat for 30 seconds per side, or wrap in foil and heat in a 350°F oven for 10 minutes.
- 5
Fill each tortilla with beef-onion mixture, top with orange segments and shredded lettuce. Serve with lime wedges to squeeze over.
- 6
Optional: add a pinch of cumin or chili powder to the beef while cooking for extra warmth.
