Ingredients
- 1.5 lb beef chuck
- 3 medium carrots
- 1 medium onion
- 2 cups beef broth
- 2 tbsp tomato paste
- 2 tbsp flour
- 2 lb potatoes
- 4 tbsp butter
- ½ cup milk
- 1 tbsp fresh thyme

Season beef with salt and pepper, then brown in a pot over medium-high heat.

Add chopped onion and carrots, cook until softened, about 5 minutes.

Stir in tomato paste and flour, cook for 1 minute.

Pour in beef broth, add thyme, bring to a simmer, cover and cook for 1.5 hours.
