Ingredients

  • 1 lb beef sirloin or tenderloin, cut into 1-inch cubes
  • ½ cup creamy peanut butter
  • ¼ cup coconut milk
  • 1 whole lime (juiced)
  • 2 tbsp soy sauce
  • 1 tbsp sriracha or chili paste
  • 2 cups store-bought ketupat (fried rice cakes)
  • ¼ cup fresh cilantro, chopped

Instructions

    Thread beef cubes onto metal skewers, leaving small gaps between pieces.

    Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Sear skewers 90 seconds per side without moving. They should be browned on edges, rare in center.

    Whisk peanut butter, coconut milk, lime juice, soy sauce, and sriracha together until smooth.

    Pour sauce over skewers and toss to coat. Warm for 1 minute, tilting pan so sauce clings.
