Ingredients

  • 1.5 lb beef chuck
  • 3 tbsp tomato paste
  • 1 medium onion
  • 3 cloves garlic
  • 4 cups beef broth
  • 2 tbsp soy sauce
  • 1 tsp salt
  • ½ tsp black pepper

    Cut the 1.5 lb beef chuck into 1-inch cubes and pat dry with paper towels. Season with 1/2 tsp salt and 1/4 tsp black pepper.

    Heat 2 tbsp oil in a large pot over medium-high heat. Add the beef in a single layer and sear until browned on all sides, about 6-8 minutes. Work in batches if needed to avoid crowding.

    Reduce heat to medium. Add the 1 sliced onion and 3 minced garlic cloves, cooking until softened and fragrant, about 3 minutes.

    Stir in the 3 tbsp tomato paste and cook for 1 minute until it darkens slightly. Add the 4 cups beef broth and 2 tbsp soy sauce, scraping up any browned bits from the bottom.

    Bring to a boil, then reduce heat to low. Cover and simmer until the beef is tender, about 1.5 hours. Add the remaining 1/2 tsp salt and 1/4 tsp black pepper to taste.
