Ingredients
- 1 lb beef heart
- 1 medium red onion
- 1 medium bell pepper
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper

Soak 4 wooden skewers in water for 10 minutes. Meanwhile, trim the beef heart and cut into 1-inch cubes; cut the onion and bell pepper into 1-inch pieces.

In a bowl, toss the beef heart cubes with 1 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper. In another bowl, toss the onion and bell pepper with the remaining 1 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper.

Thread the beef heart, onion, and bell pepper onto the skewers, alternating pieces. Preheat a grill or grill pan over medium-high heat.

Grill the skewers for 8-10 minutes, turning occasionally, until the beef heart is browned on the outside but still slightly pink inside and the vegetables are charred at the edges.
