Ingredients

  • 1.5 lbs beef sirloin or ribeye, cut into 1-inch-thick steaks
  • 3 stalks lemongrass stalks, white part only, minced
  • 4 cloves garlic cloves, minced
  • 3 tbsp fish sauce
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 1 pinch salt and black pepper to taste

Instructions

    Mix lemongrass, garlic, fish sauce, honey, and olive oil in a bowl until combined.

    Coat beef steaks evenly with marinade, rubbing it into both sides.

    Let sit at room temperature for 15 minutes, or cover and refrigerate up to 4 hours.

    Heat a grill or cast iron skillet over medium-high heat until very hot, 2 minutes.

    Pat steaks dry and season with salt and pepper. Sear 3 minutes per side without moving—surface should look caramelized and charred.
