Ingredients
- 1 lb beef stew meat
- 2 medium onion
- 2 tbsp paprika
- 2 cups beef broth
- 2 tbsp olive oil
- 1 tsp salt

Heat 2 tbsp olive oil in a large pot over medium-high. Add 1 lb beef stew meat in a single layer; cook until browned on all sides, about 5 minutes. Remove beef and set aside.

Reduce heat to medium. Add 2 sliced onions and 1 tsp salt; cook until soft and golden, about 8 minutes. Stir in 2 tbsp paprika and cook for 1 minute until fragrant.

Return beef to pot. Pour in 2 cups beef broth, scraping up any browned bits. Bring to a boil, then reduce heat to low, cover, and simmer until beef is tender, about 20 minutes.
