Ingredients
- ½ lb beef sirloin or flank steak, thinly sliced
- 8 oz fresh chow mein noodles
- 2 cups broccoli florets
- 3 tbsp soy sauce
- 1 tbsp ginger, minced
- 2 tbsp neutral oil

Boil noodles in salted water until just tender, 3–4 minutes. Drain and set aside.

Heat 1 tbsp oil in a large skillet over high heat until smoking, about 90 seconds.

Add beef in a single layer. Let it sear undisturbed for 90 seconds, then flip and cook 60 seconds more until edges are brown.

Push beef to the side. Add broccoli to the empty space, sauté for 2 minutes until bright green.

Pour in remaining 1 tbsp oil, add drained noodles and minced ginger. Toss until fragrant, about 30 seconds.
