Ingredients

  • 1 lb ground beef
  • ¼ cup peanut butter
  • 2 tbsp soy sauce
  • 4 cups arugula
  • ½ cup pitted olives
  • 1 tbsp olive oil

Instructions

    Heat 1 tbsp olive oil in a large skillet over medium-high. Add 1 lb ground beef and cook, breaking it up, until browned and no longer pink, about 6-8 minutes.

    In a small bowl, whisk together 1/4 cup peanut butter, 2 tbsp soy sauce, and 3 tbsp water until smooth. If you like heat, add a pinch of chili flakes.

    Pour the peanut sauce over the cooked beef. Stir and cook for 1-2 minutes until the sauce coats the meat and thickens slightly.

    Divide 4 cups arugula between two bowls. Top with the beef mixture and scatter 1/2 cup olives over each. Serve immediately.
