Ingredients

  • 1 lb pre-cooked pork ribs
  • ½ cup barbecue sauce
  • 1 lb frozen french fries
  • ½ medium red onion
  • 2 tbsp white vinegar
  • ½ cup cherry tomatoes

Instructions

  1. 1

Preheat oven to 425°F. Spread the 1 lb frozen french fries on a baking sheet and bake until golden and crispy, about 20 minutes, shaking halfway.

  2. 2

While fries bake, thinly slice the 0.5 red onion and toss with the 2 tbsp white vinegar and a pinch of salt. Set aside to quick-pickle.

  3. 3

Cut the 1 lb pre-cooked pork ribs into individual pieces. Brush with 0.5 cup barbecue sauce and place on a foil-lined baking sheet.

  4. 4

Bake ribs in the same oven until hot and sticky, about 10 minutes, until the sauce is bubbling and caramelized at the edges.

  5. 5

Serve ribs with the crispy fries, top with pickled onions and the 0.5 cup cherry tomatoes, halved.
