A hearty Filipino-style breakfast plate with garlic fried rice, a fried egg, and fresh tomato and lettuce. This version keeps it simple and quick for a satisfying meal any time of day.

Ingredients

  • 3 cups cooked rice
  • 4 cloves garlic
  • 2 large eggs
  • 1 medium tomato
  • 2 leaves lettuce
  • 3 tbsp vegetable oil
  • ½ tsp salt

Instructions

    Mince the 4 garlic cloves. Slice the 1 tomato into rounds and set aside with the 2 lettuce leaves.

    Heat 2 tbsp of the vegetable oil in a large skillet over medium heat. Add the minced garlic and cook until fragrant and lightly golden, about 1 minute.

    Add the 3 cups cooked rice to the skillet. Spread it out and press down lightly. Cook undisturbed for 2-3 minutes to get a slight crust, then stir and season with the 0.5 tsp salt. Continue frying, stirring occasionally, until the rice is hot and slightly crispy, about 5 minutes total. Remove from skillet and set aside.

    In the same skillet, add the remaining 1 tbsp vegetable oil over medium heat. Crack the 2 eggs into the pan, keeping them separate. Cook until the whites are set but yolks are still runny, about 2-3 minutes.

    Plate the garlic rice, top with the fried eggs, and serve with the tomato slices and lettuce on the side. Season with extra salt if desired.
