Ingredients
- 2 cups all-purpose flour
- ¾ cup water
- ½ teaspoon salt
- 2 medium ripe bananas
- 2 tablespoons sugar
- 3 tablespoons oil

In a large bowl, mix 2 cups flour, 1/2 tsp salt, and 3/4 cup water until a shaggy dough forms. Knead for 5 minutes until smooth, then cover and rest for 15 minutes.

Mash 2 ripe bananas with 2 tbsp sugar in a small bowl until mostly smooth but slightly chunky.

Divide the dough into 4 equal balls. On a floured surface, roll each ball into a 6-inch circle.

Place 2 tbsp of the banana mixture in the center of each circle. Fold the edges over to seal, then gently roll into a 7-inch round, keeping the filling inside.

Heat 1 tbsp oil in a skillet over medium heat. Cook one roti for 2-3 minutes per side, until golden brown spots appear and the dough is cooked through.

Repeat with the remaining oil and rotis. Serve warm, optionally with extra sugar or honey.
