Ingredients

  • 8 oz rice noodles
  • ½ lb minced pork
  • 8 pieces fish balls
  • 1 cup sliced mushrooms
  • 3 stalks green onions
  • 6 cups broth
  • ¼ cup crispy fried shallots
  • 2 tbsp soy sauce

Instructions

    Soak the 8 oz rice noodles in warm water for 10 minutes, then drain and set aside.

    In a large pot, bring 6 cups broth to a boil over high heat. Add the 0.5 lb minced pork, breaking it up with a spoon, and cook until it turns white, about 3 minutes.

    Add the 8 fish balls and 1 cup sliced mushrooms to the pot. Reduce heat to medium and simmer until fish balls are heated through and mushrooms are tender, about 5 minutes.

    Stir in the 2 tbsp soy sauce and season with salt and pepper to taste. The broth should be savory and slightly salty.

    Add the soaked rice noodles to the pot and cook until they are soft and tender, about 2 minutes.
