Ingredients

  • 2 lbs pork shoulder or butt, boneless and trimmed
  • 6 cloves garlic, minced
  • 2 tbsp smoked paprika
  • 3 tbsp red wine vinegar
  • ¼ cup olive oil
  • 1.5 tsp salt
  • ¾ tsp black pepper
  • ½ cup plain yogurt, for serving

Instructions

    Cut pork into 1.5-inch cubes, removing any silverskin or excess fat.

    Whisk garlic, paprika, vinegar, olive oil, salt, and pepper in a bowl.

    Add pork to the marinade and toss until coated. Cover and chill 30 minutes.

    Thread pork pieces onto metal or soaked wooden skewers, about 4 pieces per skewer.

    Heat grill to medium-high. Oil the grates well to prevent sticking.

    Grill skewers 3–4 minutes per side without moving, until charred and cooked through.

    Transfer skewers to a plate and rest 5 minutes. Serve with yogurt on the side.
