Ingredients
- 1.5 lb chicken thighs
- 1 cup pineapple chunks
- 2 medium bell peppers
- 1 large onion
- 3 cloves garlic
- 3 tbsp soy sauce

Season the 1.5 lb chicken thighs with salt and pepper. Heat 1 tbsp oil in a large skillet over medium-high heat and brown the chicken for 4-5 minutes per side until golden. Remove and set aside.

In the same skillet, add the 1 sliced onion and 3 minced garlic cloves. Cook over medium until soft and fragrant, about 3 minutes.

Add the 2 sliced bell peppers and 1 cup pineapple chunks. Stir-fry for 2 minutes until slightly tender.

Return the chicken to the skillet. Add the 3 tbsp soy sauce and 1/2 cup water. Bring to a simmer, then cover and cook for 10 minutes until the chicken is cooked through and the sauce thickens slightly.
