Ingredients

  • 1 lb ground beef
  • 4 cloves garlic, minced
  • 1 medium shallot, minced
  • 1 whole lime (juiced + zested)
  • 3 tbsp soy sauce
  • 1 medium onion, cut into chunks
  • ½ tsp each salt and pepper

    Soak 8 wooden skewers in water for 15 minutes to prevent burning.

    Mix ground beef, garlic, shallot, lime zest, soy sauce, salt, and pepper in a bowl until just combined.

    Divide mixture into 16 equal portions and roll into balls. Thread 2 balls onto each skewer, alternating with onion chunks.

    Heat grill or grill pan to medium-high until a drop of water sizzles immediately.

    Brush skewers lightly with oil. Grill 10–12 minutes, turning every 2–3 minutes, until meatballs are charred and cooked through.

    Drizzle lime juice over skewers in the final minute of cooking.
