Ingredients

  • 1.5 lbs beef sirloin or flank steak, cut into 1-inch cubes
  • 1 whole lemon (juiced + zested)
  • 4 cloves garlic cloves, minced
  • 1 tbsp ginger, grated
  • ½ tsp cayenne pepper
  • 8 skewers wooden skewers (soaked in water)

Instructions

  1. 1

Toss beef cubes with lemon juice, zest, garlic, ginger, cayenne, salt, and pepper in a bowl.

  2. 2

Thread beef onto skewers, packing pieces snugly with 1-inch gaps between each.

  3. 3

Heat a cast iron skillet or grill pan over high heat until it shimmers, about 2 minutes.

  4. 4

Sear skewers 2 minutes per side without moving — edges should char deeply and centers stay pink.

  5. 5

Transfer to a plate and rest 2 minutes before serving.

Tools you’ll need

  • large mixing bowl
  • 12-inch cast iron skillet or grill pan
  • metal or wooden skewers (soaked)
