Ingredients

  • 4 large tomatoes
  • ½ cup black olives
  • 1 cup shredded mozzarella cheese
  • ½ cup breadcrumbs
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary
  • ½ tsp salt

    Preheat oven to 400°F. Cut the 4 tomatoes in half crosswise and arrange cut-side up in a baking dish.

    In a small bowl, combine 1 cup mozzarella, 1/2 cup chopped olives, 1/2 cup breadcrumbs, 2 minced garlic cloves, 1 tbsp chopped rosemary, 2 tbsp olive oil, and 1/2 tsp salt. Mix until well combined.

    Spoon the cheese mixture evenly over the tomato halves, pressing gently to adhere.

    Bake for 20-25 minutes, until the topping is golden brown and the tomatoes are soft but still hold their shape.
