Ingredients
- 1 lb shrimp, peeled and deveined
- 1 cup cherry tomatoes
- 1 cup heavy cream
- 3 cloves garlic
- 2 tbsp fresh dill
- 1 lemon
- 1 tbsp olive oil
- ½ tsp salt

Preheat oven to 400°F. In a baking dish, toss the 1 lb shrimp and 1 cup cherry tomatoes with 1 tbsp olive oil and 1/2 tsp salt. Spread in an even layer.

Bake for 8-10 minutes until shrimp are pink and opaque and tomatoes start to blister.

Meanwhile, in a small saucepan, heat 1 cup heavy cream and 3 minced garlic cloves over medium until steaming, about 3 minutes. Do not boil.

Pour the warm cream mixture over the baked shrimp and tomatoes. Stir gently to combine.

Return to oven and bake for 5-7 minutes until sauce is slightly thickened and bubbling at edges.

Remove from oven. Squeeze juice from 1 lemon over the top and sprinkle with 2 tbsp chopped fresh dill. Serve hot.
