Baked Sea Bream

Ingredients
- 1 whole (about 1.5 lb) whole sea bream, gutted and scaled
- 1 medium lemon
- 3 cloves garlic cloves
- 4 sprigs fresh thyme sprigs
- 2 tbsp olive oil
- 1 tsp coarse salt
- ½ tsp black pepper
- 2 tbsp fresh parsley, chopped

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Pat the sea bream dry with paper towels. Score the fish 3 times on each side with a sharp knife.

Slice the lemon into thin rounds. Cut 2 of the garlic cloves into thin slices; mince the remaining clove.

Rub the fish all over with 1 tbsp olive oil, then season inside and out with the coarse salt and black pepper.

Stuff the cavity with the lemon slices, sliced garlic, and 2 thyme sprigs. Place the remaining thyme on top of the fish.

Place the fish on the prepared baking sheet. Drizzle with the remaining 1 tbsp olive oil.

Roast for 20-25 minutes, until the flesh flakes easily with a fork and the skin is golden and crisp.

Sprinkle with the minced garlic and chopped parsley. Let rest for 5 minutes before serving.
