Ingredients
- 4 filets salmon fillets
- 3 medium zucchini
- 3 tablespoons olive oil
- 2 cloves garlic
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Slice 3 medium zucchini into 1/2-inch rounds. Mince 2 garlic cloves.

In a large bowl, toss zucchini with 2 tbsp olive oil, minced garlic, 1/2 tsp salt, and 1/4 tsp black pepper. Spread on the baking sheet.

Place 4 salmon fillets on top of the zucchini. Drizzle with remaining 1 tbsp olive oil, then sprinkle with 1 tsp oregano, 1 tsp paprika, 1/2 tsp salt, and 1/4 tsp black pepper.
