Baked Salmon with Zucchini

Ingredients

  • 4 filets salmon fillets
  • 3 medium zucchini
  • 3 tablespoons olive oil
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

    Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Slice 3 medium zucchini into 1/2-inch rounds. Mince 2 garlic cloves.

    In a large bowl, toss zucchini with 2 tbsp olive oil, minced garlic, 1/2 tsp salt, and 1/4 tsp black pepper. Spread on the baking sheet.

    Place 4 salmon fillets on top of the zucchini. Drizzle with remaining 1 tbsp olive oil, then sprinkle with 1 tsp oregano, 1 tsp paprika, 1/2 tsp salt, and 1/4 tsp black pepper.

    Bake for 15-18 minutes, until the salmon is opaque and flakes easily with a fork, and the zucchini is tender and lightly browned.
