- 2 filets salmon fillets
- 12 oz baby potatoes
- 8 oz green beans
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 whole lemon

Preheat oven to 425°F. Halve the 12 oz baby potatoes and toss with 1 tbsp olive oil, 1/2 tsp garlic powder, salt, and pepper. Spread on a baking sheet and roast for 10 minutes.

Meanwhile, trim the 8 oz green beans and toss with 1 tbsp olive oil, 1/2 tsp garlic powder, salt, and pepper.

After 10 minutes, push potatoes to one side of the sheet. Place the 2 salmon fillets on the other side, brush with remaining 1 tbsp olive oil, and season with salt and pepper. Add green beans to the sheet.

Roast for 12-15 minutes, until salmon is opaque and flakes easily, and potatoes are golden and tender. Squeeze the juice of 1 lemon over everything before serving.
