- 4 medium russet potatoes
- 1 tbsp olive oil
- 1 tsp kosher salt
- 1 cup sour cream
- 2 tbsp fresh chives
- ½ tsp black pepper

Preheat oven to 425°F. Scrub the 4 potatoes and pat dry. Pierce each potato several times with a fork.

Rub the potatoes with 1 tbsp olive oil and sprinkle with 1 tsp kosher salt. Place directly on the oven rack.

Bake for 50-60 minutes, until the skins are crisp and a knife slides in easily. Remove and let rest for 5 minutes.

While potatoes bake, chop 2 tbsp chives. In a small bowl, mix the chives with 1 cup sour cream and 1/2 tsp black pepper.
