Ingredients
- 12 whole oysters
- 1 cup shredded mozzarella cheese
- ¼ cup grated parmesan cheese
- 2 tbsp butter
- 2 cloves garlic
- 2 tbsp fresh parsley
- 1 whole lemon

Preheat oven to 450°F (230°C). Shuck the 12 oysters, discarding the top shells and keeping the bottom shells with the oysters. Arrange them on a baking sheet lined with rock salt or crumpled foil to keep them steady.

In a small bowl, mix 1 cup mozzarella, 1/4 cup parmesan, and 2 tbsp chopped parsley. Set aside.

Melt 2 tbsp butter in a small skillet over medium heat. Add 2 minced garlic cloves and cook until fragrant, about 1 minute, stirring constantly. Remove from heat.

Brush each oyster with the garlic butter, then top generously with the cheese mixture, pressing lightly.

Bake for 8-10 minutes, until the cheese is melted and golden brown on top. Serve immediately with lemon wedges for squeezing.
