Ingredients

  • 4 filets white fish fillets
  • 1 bunch asparagus
  • 8 oz green beans
  • ½ cup Parmesan cheese
  • ¼ cup pine nuts
  • 3 tbsp olive oil

Instructions

  1. 1

Preheat oven to 425°F. On a large baking sheet, toss the 1 bunch asparagus and 8 oz green beans with 2 tbsp olive oil, salt, and pepper. Spread in a single layer.

  2. 2

Pat the 4 fish fillets dry and place them on top of the vegetables. Drizzle with remaining 1 tbsp olive oil and season with salt and pepper.

  3. 3

Sprinkle the 1/2 cup Parmesan and 1/4 cup pine nuts over the fish and vegetables.

  4. 4

Bake until fish is opaque and flakes easily with a fork, and vegetables are tender, about 12-15 minutes. Serve immediately.

  5. 5

Optional: add a squeeze of lemon or a pinch of red pepper flakes before serving if you have them.
