Ingredients

  • 4 fillets (6 oz each) cod fillets
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 can (14 oz) canned crushed tomatoes
  • ½ cup Kalamata olives, pitted
  • 3 tbsp capers in brine, drained
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh lemon juice
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes

Instructions

    Preheat oven to 400°F. Pat cod fillets dry with paper towels and season both sides with salt and pepper.

    Heat olive oil in a large oven-safe skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

    Stir in crushed tomatoes, olives, capers, and red pepper flakes. Simmer for 3 minutes.

    Nestle cod fillets into the sauce, spooning some sauce over the top.

    Transfer skillet to oven and bake for 12-15 minutes until cod is opaque and flakes easily with a fork.

    Remove from oven and drizzle with fresh lemon juice. Garnish with chopped parsley and serve immediately.
