Ingredients
- 4 fillets (6 oz each) cod fillets
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 can (14 oz) canned crushed tomatoes
- ½ cup Kalamata olives, pitted
- 3 tbsp capers in brine, drained
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh lemon juice
- ½ tsp sea salt
- ¼ tsp black pepper
- ¼ tsp red pepper flakes

Preheat oven to 400°F. Pat cod fillets dry with paper towels and season both sides with salt and pepper.

Heat olive oil in a large oven-safe skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

Stir in crushed tomatoes, olives, capers, and red pepper flakes. Simmer for 3 minutes.

Nestle cod fillets into the sauce, spooning some sauce over the top.

Transfer skillet to oven and bake for 12-15 minutes until cod is opaque and flakes easily with a fork.
