Baião de Dois with Charred Beef & Cheese

Ingredients
- 1.5 cups cooked white rice
- 1 cup cooked black-eyed peas or kidney beans
- ¾ lb beef sirloin or skirt steak
- ½ cup, shredded sharp cheddar or similar melting cheese
- 1 cup frozen cassava fries or yuca chips
- ¼ cup farofa (toasted cassava flour)
- 1 whole lime
- ¼ cup fresh cilantro or parsley, chopped

Heat 2 tbsp oil in a large skillet over medium-high. Season beef with salt and pepper, then sear 2 min per side without moving.

Transfer beef to a plate. Add rice and beans to the same skillet, stir to warm through, ~2 minutes.

Nestle beef back into the rice, scatter cheese over the top. Cover and cook until cheese melts, ~90 seconds.

While rice finishes, bake cassava fries at 420°F until golden and crispy, ~8 minutes.

Toss the farofa with 1 tbsp butter in a small pan over medium heat for 1 minute until fragrant.

Squeeze lime juice over the bowl, top with cassava, farofa, and cilantro. Serve hot.
