Ingredients
- ¾ lb ground beef
- 1.5 cups cooked white rice, cooled and pressed into patties
- ⅓ cup tahini
- 1 whole lemon (zested + juiced)
- 1 tsp cumin
- ¼ cup red onion, minced
- ¼ cup fresh parsley or cilantro, chopped

Mix ground beef, minced red onion, cumin, lemon zest, salt, and pepper in a bowl until just combined.

Divide meat into 4 portions and mold onto skewers or into patties. Heat oil in a skillet over medium-high until it shimmers.

Sear kebabs 3–4 minutes per side without moving. Crust should look dark brown; meat stays juicy inside.

Remove kebabs. In the same skillet, press rice patties flat and sear 2 minutes per side until golden and crispy.

Whisk tahini with lemon juice, 3 tbsp water, minced garlic, and salt until pourable. Taste and adjust.
