Ingredients

  • 2 medium pear
  • 8 slices bacon
  • 4 cups arugula
  • 1.5 oz blue cheese
  • ¼ cup walnuts
  • 2 tbsp olive oil

Instructions

    Preheat oven to 400°F. Cut each pear into 8 wedges, removing core. Wrap each wedge with 1 slice bacon, stretching slightly to cover.

    Place wrapped pears on a baking sheet lined with parchment. Bake until bacon is crisp and browned, about 15-18 minutes, turning once halfway.

    In a large bowl, toss the 4 cups arugula with the 2 tbsp olive oil and a pinch of salt and pepper.

    Divide arugula onto plates. Top with hot bacon-wrapped pears, crumble the 1.5 oz blue cheese over, and sprinkle with the 0.25 cup walnuts. Serve immediately.
