Ingredients
- 2 4-oz pieces pork cutlets (or schnitzel)
- 4 slices bacon slices
- 2 slices cheddar or Swiss cheese, sliced
- ⅓ cup all-purpose flour
- 2 whole eggs
- 1.5 cups frozen french fries

Preheat oven to 425°F. Spread fries on a sheet pan, toss with salt, pepper, and a drizzle of oil. Roast until golden, ~12 minutes.

While fries roast, cook bacon in a skillet over medium heat until crispy, ~5 minutes. Transfer to a plate.

Place flour in a shallow bowl. Season pork cutlets with salt and pepper, then dredge both sides in flour.

Increase heat to medium-high. Add 1 tbsp oil to the bacon fat in the skillet. Sear cutlets 2 minutes per side until golden.

Top each cutlet with a cheese slice and crumbled bacon. Cover and cook 1 minute until cheese melts.

Push cutlets to the side, add 1 tbsp oil to the pan, and fry eggs until whites set but yolks jiggle, ~2 minutes. Serve with hot fries.
