Ingredients
- ½ lb cooked BBQ pork (rotisserie or leftover char siu), shredded
- ½ lb fresh egg noodles (ba mee)
- 1.5 cups cooked jasmine rice
- 2 whole eggs
- 3 tbsp soy sauce
- 2 whole scallions, sliced thin

Boil salted water in a large skillet, add noodles, cook until just tender, about 3 minutes. Drain and set aside.

Return skillet to medium-high heat with 1 tbsp oil. Add cooked rice, break up any clumps, and stir-fry until lightly golden at edges, about 3 minutes. Push to the side of the skillet.

Crack both eggs into the empty side of the skillet. Fry until whites set but yolks still jiggle, about 2 minutes.

Add cooked noodles to the skillet, drizzle with soy sauce, toss gently to combine. Cook for 1 minute until noodles are hot and coated.

Warm the shredded BBQ pork in a small pan or microwave for 1 minute until heated through.

Divide noodles and rice between two bowls. Top with warm pork and a fried egg. Scatter scallions over the top and serve immediately.
