Ingredients
- 8 oz Chinese red pork (char siu), thinly sliced
- 6 oz fresh egg noodles
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- ½ whole lime (juiced)
- 1 whole Thai bird's-eye chili, minced
- 2 whole scallions, sliced
- ¼ cup cilantro, chopped

Boil noodles in salted water until al dente, ~3 minutes. Drain and set aside.

Heat 1 tbsp neutral oil in a large skillet over medium-high heat until shimmering, ~1 minute.

Add noodles and spread flat. Cook without stirring until edges turn golden and crispy, ~3 minutes.

Toss noodles. Add char siu pork, soy sauce, oyster sauce, and minced chili. Toss until heated through, ~2 minutes.
