Ingredients

  • 1 can (5 oz) canned tuna in water, drained
  • 1 whole ripe avocado
  • 4 slices sourdough bread
  • 2 slices sharp cheddar cheese
  • 1.5 tbsp butter, softened
  • ½ tbsp lemon juice

Instructions

  1. 1

Halve the avocado, remove the pit, and scoop into a small bowl. Mash with a fork until creamy, then stir in lemon juice and a pinch of salt.

  2. 2

Flake the drained tuna with a fork and mix gently with a small pinch of salt and pepper.

  3. 3

Spread mashed avocado on two bread slices, then top each with half the tuna, then one cheddar slice.

  4. 4

Cover each with the remaining bread slices, cheese-side facing down.

  5. 5

Spread 0.75 tbsp softened butter evenly on the outside of each sandwich.

  6. 6

Heat a skillet over medium-high. Place sandwiches in the pan and cook 2–3 minutes until bread is golden and crispy.

  7. 7

Flip and cook the other side 2–3 minutes until golden and cheese melts—listen for a gentle sizzle.

  8. 8

Transfer to a plate, slice in half, and serve hot.
