Ingredients

  • 2 slices bread (sourdough or whole wheat)
  • 1 whole ripe avocado
  • 2 large eggs
  • ½ whole lemon
  • ¼ teaspoon red pepper flakes
  • 1 pinch salt and black pepper to taste

Instructions

    Toast the bread until golden and crispy on both sides, about 3 minutes total.

    Heat a small skillet over medium heat. Crack both eggs into the pan; cook until whites set but yolks still jiggle, ~4 minutes.

    Cut the avocado in half, discard the pit, and scoop flesh into a bowl.

    Mash avocado with a fork until chunky-smooth. Squeeze in lemon juice and season with salt and pepper.
