Ingredients

  • 2 slices bread (sourdough or wholegrain)
  • 1 whole avocado, ripe
  • 2 whole eggs
  • ½ whole lime
  • ¼ tsp sea salt
  • 2 tbsp olive oil

Instructions

    Toast bread in a toaster or skillet until golden brown and crispy, ~3 minutes.

    Heat oil in a skillet over medium-high until shimmering, ~90 seconds.

    Crack eggs into the hot skillet and fry until whites set but yolks still jiggle, ~4 minutes.

    Cut avocado in half, scoop flesh into a bowl, and mash with a fork until chunky.

    Divide mashed avocado between the two toast slices, spreading evenly.

    Top each toast with a fried egg, then squeeze lime juice over the top.
