Ingredients

  • 1 lb pizza dough
  • ½ cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • 2 cups arugula
  • ½ cup parmesan cheese
  • 1 tbsp olive oil

Instructions

  1. 1

Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while it heats.

  2. 2

On a floured surface, stretch the 1 lb pizza dough into a 12-inch round. Transfer to a parchment-lined baking sheet or pizza peel.

  3. 3

Spread the 1/2 cup tomato sauce evenly over the dough, leaving a 1-inch border. Sprinkle with the 1 cup shredded mozzarella.

  4. 4

Bake for 12-15 minutes, until the crust is golden and the cheese is bubbly and browned in spots.

  5. 5

In a bowl, toss the 2 cups arugula with the 1 tbsp olive oil and a pinch of salt.

  6. 6

Top the hot pizza with the dressed arugula and shave or sprinkle the 1/2 cup parmesan over the top. Slice and serve immediately.

  7. 7

Optional: add a drizzle of balsamic glaze or a pinch of red pepper flakes for extra flavor.
