Ingredients
- ½ lb fresh anchovies
- ½ cup white wine vinegar
- ¼ cup extra virgin olive oil
- 2 cloves garlic
- ½ tsp salt

Rinse the 0.5 lb anchovies and pat dry. Remove heads and bones, then butterfly each fillet, leaving them attached at the tail.

Layer the fillets in a shallow dish and sprinkle with 0.5 tsp salt. Pour 0.5 cup vinegar over them, ensuring all are submerged. Let sit for 10 minutes until the flesh turns opaque and white.

Drain the vinegar and pat the fillets dry. Arrange them on a serving plate.

Thinly slice the 2 garlic cloves and scatter over the anchovies. Drizzle with 0.25 cup olive oil. Serve immediately or chill briefly.
