Ingredients
- 3 cups cooked rice
- 2 large eggs
- 1 medium carrot
- 3 stalks green onions
- 2 tbsp soy sauce
- 3 tbsp vegetable oil
- ½ medium cucumber
- 1 whole lime

Heat 2 tbsp vegetable oil in a large skillet or wok over high heat. Add 2 beaten eggs and scramble until just set, about 1 minute. Remove eggs to a plate.

Add 1 tbsp vegetable oil to the skillet. Add 1 diced carrot and stir-fry until slightly tender, about 2 minutes.

Add 3 cups cooked rice (preferably day-old) to the skillet. Break up clumps and stir-fry for 3-4 minutes until rice is heated through and slightly toasted.

Add 2 tbsp soy sauce and stir-fry for 1 minute until rice is evenly coated. Return the eggs to the skillet and toss to combine.

Stir in 3 sliced green onions (reserve a few for garnish) and cook for 30 seconds. Serve hot with cucumber slices and lime wedges on the side.
