Ingredients
- 3 large eggs
- ½ cup sugar
- ½ cup all-purpose flour
- 1 cup milk
- ½ cup almonds
- 2 tbsp butter

Preheat the oven to 375°F (190°C). Place the 2 tbsp butter in a 9-inch pie dish or cast-iron skillet and put it in the oven to melt while you make the batter.

In a medium bowl, whisk the 3 eggs and 1/2 cup sugar until pale and frothy, about 2 minutes. Add the 1/2 cup flour and whisk until smooth, then slowly whisk in the 1 cup milk until the batter is thin and lump-free.

Carefully remove the hot dish from the oven and swirl the melted butter to coat the bottom and sides. Pour the batter into the dish, then scatter the 1/2 cup almonds evenly over the top.

Bake until the clafoutis is puffed, golden brown around the edges, and set in the center (a knife inserted near the middle comes out clean), about 25 minutes. Serve warm or at room temperature, dusted with extra sugar if you like.
