Ingredients

  • ¾ lb pork shoulder, thinly sliced
  • 1 cup pineapple, diced
  • ½ medium white onion, thinly sliced
  • ¼ cup cilantro, chopped
  • 8 count corn tortillas
  • 1 lime lime wedges

Instructions

    Heat oil in a large skillet over medium-high until shimmering, about 1 minute.

    Add pork in a single layer and cook without stirring until golden and charred, 3–4 minutes.

    Flip pork, add pineapple and onion, stir occasionally until pork is cooked through, 3–4 minutes.

    Warm tortillas in the skillet 30 seconds per side, then transfer to a plate.

    Fill tortillas with pork mixture, top with cilantro, and squeeze lime over each.
