Ingredients
- 3 tbsp olive oil
- 1 large yellow onion, thinly sliced
- 1 cup brown lentils, rinsed
- ½ cup long-grain white rice
- 6 cups water
- ¾ tsp turmeric powder
- 1 whole lime, juiced
- 1 to taste salt and black pepper to taste
Instructions

Heat oil in a large pot over medium. Add onion and cook 12–15 minutes, stirring occasionally, until deep golden.

Add lentils, rice, water, and turmeric. Stir to combine and bring to a boil over high heat.

Reduce heat to low, cover, and simmer 25–30 minutes until lentils and rice are tender.

Stir in lime juice. Taste and adjust salt and pepper. Serve hot.
