3-Color Coconut Pudding (Che Ba Mau)

Vietnamese sweet drink that's part dessert, part beverage—layers of coconut cream, sweetened black beans, and sugar syrup poured over ice. No cooking required, just mix and chill.

Ingredients

  • 1 can (13.5 oz) canned coconut milk (full-fat)
  • 1 can (15 oz) canned black beans in light syrup
  • ¾ cup granulated sugar
  • ¾ cup water
  • ½ tsp vanilla extract
  • 2 cups ice

Instructions

    Stir sugar and water in a bowl until sugar dissolves completely, ~1 minute. Add vanilla and set aside to cool.

    Drain black beans, rinse under cold water, and divide among 4 tall glasses.

    Pour cooled sugar syrup evenly over the black beans in each glass.

    Top each glass with 2–3 tbsp of the thick coconut cream from the top of the can.

    Add ice to fill each glass and stir gently before drinking to swirl the layers.
