Ingredients

  • 1 box (18 oz) chocolate cake mix, prepared and cooled
  • 6 tbsp butter, softened
  • ½ cup vanilla frosting
  • 8 oz chocolate chips
  • 1 tbsp coconut oil
  • ¼ cup rainbow sprinkles
  • 12 count wooden cake-pop sticks or lollipop sticks
  • 1 count styrofoam block (for drying) or tall glass

Instructions

  1. 1

Crumble cooled cake into fine crumbs. Add softened butter and frosting, stirring until the mixture holds together when pinched.

  2. 2

Roll mixture into 12 evenly sized balls, about 1.5 inches across. Place on a parchment-lined tray and freeze for 10 minutes.

  3. 3

Melt chocolate chips with coconut oil in a microwave-safe bowl in 30-second bursts, stirring between each, until smooth and glossy.

  4. 4

Insert a stick into the top of each chilled cake ball, twisting gently to secure it.

  5. 5

Dip each cake pop into melted chocolate, rotating to coat evenly. Let excess drip off for 3–5 seconds.

  6. 6

Immediately dip coated top into sprinkles, then stand upright in a styrofoam block or tall glass. Let set at room temperature 5 minutes until chocolate hardens.
