Ingredients

  • 1 whole, shredded rotisserie chicken
  • 6 cups chicken broth
  • 8 oz rice noodles (pho style)
  • 1.5 tbsp fish sauce
  • 1 tbsp fresh ginger, sliced thin
  • 2 whole, divided limes
  • 1 bunch, mixed fresh herbs (Thai basil, cilantro, mint) & sliced chili peppers

Instructions

    Bring broth to a boil in a large pot over high heat. Add ginger slices and fish sauce, stir well.

    Add rice noodles directly to boiling broth. Cook until tender, stirring occasionally, about 4 minutes.

    Stir in shredded rotisserie chicken. Simmer 1 minute until heated through.

    Divide broth, noodles, and chicken between two bowls. Squeeze juice from one lime half into each bowl.

    Top each bowl with fresh herbs and sliced chilies. Serve remaining lime wedges and extra herbs on the side.
