Ingredients
- 1 whole, shredded rotisserie chicken
- 6 cups chicken broth
- 8 oz rice noodles (pho style)
- 1.5 tbsp fish sauce
- 1 tbsp fresh ginger, sliced thin
- 2 whole, divided limes
- 1 bunch, mixed fresh herbs (Thai basil, cilantro, mint) & sliced chili peppers

Bring broth to a boil in a large pot over high heat. Add ginger slices and fish sauce, stir well.

Add rice noodles directly to boiling broth. Cook until tender, stirring occasionally, about 4 minutes.

Stir in shredded rotisserie chicken. Simmer 1 minute until heated through.

Divide broth, noodles, and chicken between two bowls. Squeeze juice from one lime half into each bowl.
