Ingredients

  • 1.5 cups all-purpose flour
  • ½ cup butter, softened
  • ¾ cup granulated sugar
  • 1 whole egg
  • 2 tsp ground cinnamon, divided
  • ½ tsp cream of tartar

Instructions

    Preheat oven to 375°F. Mix flour, 1.5 tsp cinnamon, and cream of tartar in a bowl.

    In another bowl, beat softened butter and sugar until fluffy, about 2 minutes.

    Add egg to butter mixture and stir until combined.

    Fold flour mixture into egg mixture until no dry streaks remain.

    Mix remaining 0.5 tsp cinnamon with 2 tbsp sugar in a small bowl.

    Scoop dough into 12 balls, roll in cinnamon-sugar, and space 2 inches apart on a sheet pan.

    Bake until edges are set but centers still look slightly underdone, 8–10 minutes.
