Ingredients

  • 3 cups rotisserie chicken, shredded
  • 1.5 cups frozen peas and carrots
  • ½ medium yellow onion, diced
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 1.5 cups chicken broth
  • 1 can (8 count) refrigerated biscuit dough
  • ½ cup sharp cheddar cheese, shredded

Instructions

    Heat oven to 425°F. Melt butter in a 12-inch cast iron skillet over medium heat.

    Add diced onion; cook until softened and fragrant, about 3 minutes.

    Sprinkle flour over onion and stir constantly for 1 minute until no lumps remain.

    Pour in broth slowly while stirring. Add chicken, frozen vegetables, and cheese; simmer 2 minutes.
