Ingredients

  • 1 lb pork tenderloin or pork loin, cut into 1-inch cubes
  • 3 tbsp fish sauce
  • 4 cloves garlic, minced
  • 2 tbsp brown sugar
  • ½ whole lime (juiced)

Instructions

    Thread pork cubes onto skewers, leaving 1/4-inch gaps between pieces.

    Whisk fish sauce, garlic, sugar, and lime juice in a small bowl until sugar dissolves.

    Heat grill to medium-high. Brush grates with oil until they smoke slightly.

    Grill skewers 6–7 minutes total, turning every 90 seconds, until edges char and pork is cooked through.

    Brush skewers with the fish sauce glaze in the last 30 seconds of cooking.

    Transfer to a plate. Serve hot with remaining glaze for dipping.
