Ingredients

  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 whole large egg
  • 1.5 cups all-purpose flour
  • ½ tsp cream of tartar
  • 1.5 tsp ground cinnamon, divided

Instructions

    Mix softened butter and 0.75 cup sugar in a bowl until pale and fluffy, about 2 minutes.

    Stir in egg, then fold in flour, cream of tartar, and 1 tsp cinnamon until just combined.

    Mix remaining 0.5 tsp cinnamon with 2 tbsp sugar in a small bowl.

    Roll dough into 1-inch balls, coat in cinnamon-sugar, and place 2 inches apart on a parchment-lined baking sheet.

    Bake at 375°F for 9–11 minutes until edges are set but centers still look slightly underdone.
